Looking back, what I remember is the change from one stop to the next: different room, different smell, different crowd. The hotpot meal was only one part of it.
The unglamorous part: the Chongqing stops were organised, but the food did not arrive like a rehearsed tasting menu. Each place kept its own character.
Before you go, come hungry in Chongqing and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller.
We booked because arranging Chongqing ourselves looked fiddly. We came away remembering the conversations as much as the places.
I would change my shoes, not the itinerary. With 8 hours and 30 minutes to work with, the balance felt sensible.
