One detail from the day: the useful moment came when the host corrected one small technique at the cooking session in Chongqing. That is the part I tried again after getting home.
The useful part in Chongqing was having someone explain how to order the same dishes later. I left with names in my phone, not just photos.
A practical note: one Chongqing dish was outside my comfort zone, which was half the reason I booked. Asking how locals eat it made the stop much more interesting. I would rather keep the pause at the cooking session than add another stop.
In hindsight, the best compliment I can give is that I never checked how many stops were left. The cooking session arrived at just the right point in the route.
