Looking back, there was enough explanation to follow the recipe, but not so much that the cooking lost its rhythm. The cooking session in Nanjing felt hands-on from the start.
The unglamorous part: dietary questions in Nanjing were handled before we started, not halfway through the first tasting. That made the session much easier to enjoy.
Before you go, come hungry in Nanjing and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller.
