One detail from the day: this was less about eating a huge meal than paying attention to several small ones. That rhythm worked for 4 hours. For 4 hours around Hong Kong, the pace felt about right.
The Hong Kong meeting point was simple to find, and the food stops came at a sensible pace. There was time to ask what we were eating rather than just moving to the next plate.
A practical note: one Hong Kong dish was outside my comfort zone, which was half the reason I booked. Asking how locals eat it made the stop much more interesting. With 4 hours to work with, the balance felt sensible.
In hindsight, I liked this more a day later, when I looked back through my photos and realised how different Hong Kong and the dim sum stops had felt.
